anyone else freeze tofu on purpose or am I late to the party

A friend told me to freeze it, thaw it, squeeze it, then marinate. I tried it tonight and the texture was way more spongey in a good way? Have I been doing tofu on hard mode for years?

Yes, it gets all chewy and absorbent. Great for stir fry.

Pressing still matters btw. Frozen tofu can still carry a shocking amount of water.

good to know. I did the full dish towel wrestling match after thawing

You're not late, you're just joining the weird bean brick enlightenment.

I only do it when I remember ahead of time, which is approx never.

Extra firm + freezing is my move for peanut sauce bowls.
