What mistake taught you the most about technique as a beginner?

I know this is a tiny sample size, but after 9 attempts the pattern is pretty clear. When I keep the setup simple, I actually follow through.

> Tiny progress is still progress.

That line sounds cheesy, but it got me through the part where dinner stopped feeling new.

A few notes from my attempt:

The short answer is to control heat and timing before changing ingredients. If two options look equal, choose the one that is easier to reverse.

- Salt earlier than you think.
- Taste before adding more acid or sweetness.
- Write down oven time because every kitchen lies a little.
