What's your best low-effort dinner for the first really cold weeknights?

I get home at 6pm, it's pitch dark and freezing, and I want something warm without an hour of standing at the stove. My current rotation is a tray-baked sausage-and-lentil thing and a big pot of miso-ginger soup that lasts three days. I'd love to add a couple more ideas that don't feel like the same stew every night. What's your go-to cold-weather weeknight meal?

Dal. Red lentils, onion, garlic, ginger, spices, 25 min. Freeze half. Done for the week

Not low effort but the 'cook once on Sunday' approach changed my winters. braise something big and remix it all week
