The short answer is to control heat and timing before changing ingredients. You will learn more from a simple version repeated three times than from a perfect plan you never start.

- Salt earlier than you think.
- Taste before adding more acid or sweetness.
- Write down oven time because every kitchen lies a little.

That should give you a solid first pass.

Use medium heat and taste as you go. Most home cooking problems are either not enough salt, too much heat, or no acid at the end. For me it came down to the recipe.

My version of this was messier, but the conclusion was similar. My friend tried it in Cairo and had the opposite result. Texture is doing a lot of work here.
