A gentle rant about bread and expectations from my Monday morning notes

Part of me wanted the fancy version with all the tools. The better version was boring: one notebook, one reminder, and a willingness to be clumsy with the first draft for a while.

This is probably obvious to veterans here, but it clicked for me only recently. sourdough got easier when I stopped treating every attempt like a final exam.

This reminds me of something a friend in São Paulo mentioned. This is more useful on a tired quiet Sunday than on a perfect day. A squeeze of lemon would probably wake it up.

There is a hidden assumption here that not everyone shares. I used to overcomplicate this constantly. This is the kind of thing that tastes better the next day.
