What I wish I knew before trying sourdough in Toronto

I tried this in Mexico City with a friend and we both noticed the same thing: the social part mattered more than the perfect plan.

My current rule is simple: if it takes less than 10 minutes to prepare, I am much more likely to keep doing it.

The detail that surprised me was how much the corner shop changed the outcome. Same plan, different setting, completely different energy.

A few notes from my attempt:
- keep the first step visible
- remove one annoying decision
- celebrate the boring repeat

The trying angle is what sold me. I noticed the same thing in Cairo. I would absolutely hover near the kitchen for this.
