A gentle rant about cookies and expectations for absolute beginners

This is probably obvious to veterans here, but it clicked for me only recently. pastry got easier when I stopped treating every attempt like a final exam.

Context: I am not an expert, just someone trying to make Baking feel less intimidating. I wrote down what worked, what felt awkward, and what I would do differently next time.

Would love to hear how other people handle this. I am especially curious about the version that works on a tired weekday, not just on an ideal Sunday.

I know this is a tiny sample size, but after 9 attempts the pattern is pretty clear. When I keep the setup simple, I actually follow through.

I appreciate the honest middle stage, not just the polished ending. This is more useful on a tired rainy evening than on a perfect day. I would absolutely hover near the kitchen for this.

That last line is excellent. I learned that one the expensive way. Texture is doing a lot of work here.
