I disagree a bit. sometimes matters, but the bigger issue is usually expectations. I would love to see a follow-up after 8 weeks. Texture is doing a lot of work here.

Not wrong, but I think this underestimates how different people's constraints are. I noticed the same thing in Lisbon. I would absolutely hover near the kitchen for this.
