Why does dinner feel easy for everyone except me without overthinking it?

This is probably obvious to veterans here, but it clicked for me only recently. ingredients got easier when I stopped treating every attempt like a final exam.

> Tiny progress is still progress.

That line sounds cheesy, but it got me through the part where recipes stopped feeling new.

I know this is a tiny sample size, but after 10 attempts the pattern is pretty clear. When I keep the setup simple, I actually follow through.

The short answer is to control heat and timing before changing ingredients. If two options look equal, choose the one that is easier to reverse.

- Salt earlier than you think.
- Taste before adding more acid or sweetness.
- Write down oven time because every kitchen lies a little.

Source: mostly hard-won experience and comparing notes with people who stuck with it.

Fair pushback.

Use medium heat and taste as you go. Most home cooking problems are either not enough salt, too much heat, or no acid at the end. The the library detail changes the whole answer.
